So far I’ve been loving the transition to a healthy vegan lifestyle. I’ve been able to make the most delicious, hearty and healthy meals; I know exactly what I’m putting into my body and it’s thanking me for it. The hardest part for me has been cutting out dairy.. I LOVE cheese and milk was a huge staple in our house. Finding substitutes for milk and cheese is pretty difficult too. Of course there’s the vegan brands that make overly processed comparable products.. But Id honestly rather eat the real thing than all those chemicals.
I never would have thought you could make a delicious whipped cream from a natural dairy free source. The best part.. It’s one ingredient and you can’t even tell the difference!
I started by chilling a can of organic coconut milk in the refrigerator overnight. The next morning I opened
the can and scooped out all the coconut cream from the top and placed it into a small mixing bowl. Now here’s the best part – you can simply start whipping the chilled cream and serve as is! I decided to add a teaspoon of cinnamon and a teaspoon of pure maple syrup for a bit of extra flavor and sweetness. Heavenly.
I added it to a giant bowl of fruit and enjoyed with my breakfast.
