Cauliflower & Sweet Potato Curry

I love me a good curry! I could probably eat just curry dishes for lunch and dinner for the rest of my life. They’re packed with so much flavor and spices and you can really put whatever you want in it (depending on the type of curry). Today’s curry is West Indian inspired and I use a curry powder called ‘LaLa’s’ which has all the good spices in it, including turmeric. Yum!

Ingredients for 2-3 person serving:
1 head of cauliflower
1 large sweet potato
1/2 chopped onion
2 cloves of garlic
1 tablespoon of coconut oil
1 can chickpeas (drained & rinsed)
1 can coconut milk
1/2 cup coconut water
3 tablespoons of curry powder
Pinch of cinnamon

First cut up your cauliflower and sweet potato into chunky pieces. Heat a large skillet on medium heat and add the coconut oil, onions and garlic. Let the ingredients simmer a bit until you’ve got a really great aroma and the onions begin to caramelize. Add your curry powder and mix together for a few more minutes. Now add your main ingredients and the coconut milk and water, stir until the curry has mixed in with the milk and juices and then pop a lid on the skillet. Stir every few minutes until cauliflower and sweet potato are tender. And voila! You’ve got yourself an amazingly delicious curry dinner. I usually serve in bowls with a side of wild or brown rice.
