Ok this dish is actually more then just sautéed beans and rice it’s the most wholesome delicious meal I have created since changing to a more raw plant based lifestyle. I love beans. I mean – LOVE beans. There are so many different kinds and I never get tired of adding them to almost every meal. They are always packed with nutrition and provide me with the daily protein I need. I got inspired by a famous blogger and ‘health food guru’ as I like to call her – Deliciously Ella. I follow her on Instagram (my IG id: thevegatarian) and she posts the most amazing meal inspirations I’ve seen. She’s dedicated to a plant based lifestyle so her meals are always great for me to follow. This time however it was just two recent IG posts she made that I couldn’t wait for the recipe and had to try on my own! I mixed a homemade pesto with some tahini and sautéed it with the beans and veggies, cooked rice with apple cider vinegar and topped it off with tamari when it was cooked and oh my goodness. It could not have turned out better!
1 cup wild/brown rice
1 & 1/2 cups water
2 tablespoons apple cider vinegar
Sprinkling of tamari to taste
1 can pinto beans
10 cherry tomatoes
A few stalks of kale
1 clove of garlic
Pinch of salt and pepper
For the tahini pesto:
2 tablespoons tahini
2 handfuls of fresh basil leaves
1/4 cup pine nuts (feel free to omit if there’s allergies)
1/2 cup olive oil
1 clove garlic
Pinch salt and pepper
Put rice, water, apple cider vinegar into a rice cooker (or in a big enough pot on the stove) bring to a boil, reduce heat and simmer for about 20 mins or until the rice cooker is done.
After washing and cutting the kale into edible pieces and cutting the cherry tomatoes in half add the beans, tomatoes and kale to a lightly oiled skillet and cook on medium low. Press the garlic in a garlic press and add in the skillet. Sprinkle or grind a small amount of salt and pepper in the pan.
When the rice is done allow to cool for a few moments and then add the tamari – mix well together and scoop out your portion into a bowl. Take the sautéed beans and veggies and mix in the tahini pesto until everything is nicely coated and then add to your bowl of rice.
That’s it! It’s that simple. And I promise you will not be disappointed with the wholesome nourishment you will receive.
