Roasted Curried Cauliflower

I’m always looking to make a good side dish with my meals and usually try to be pretty creative, but this time I thought why not just roast some cauliflower as I just bought a giant head of it at the farmers market. Normally I would have made mashed cauliflower with garlic or a cauliflower crust for pizza but since I was making falafels I thought a roasted veggie might be nice. Falafels are usually full or coriander so I took that spice and played with it in my cauliflower dish. What a great pairing! I was quite pleased with my dinner last night.

(Serves 2-3)
1/2 head cauliflower, chopped
1 teaspoon coriander
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon turmeric
Pinch of salt
Olive oil

Preheat oven to 350 degrees. In a deep bowl sprinkle the cauliflower pieces with olive oil and then add the spices and salt. Mix everything together until the cauliflower has absorbed the spices and is nicely colored. Pour onto a lined baking pan (I use parchment paper) and place in oven. Let it roast for about 15 minutes and your done! So simple!
