Rawesome Guacamole

I used to hate guacamole. Everyone else would be raving about how delicious it was with corn chips and as a dip, and all I could think was: ‘traitors! Corn chips are ment to be dipped in salsa. only salsa’. Well, I was proven wrong a few years ago when I mustered up enough courage to try some and since then – the true ‘original’ combo is corn chips and guacamole! Of course I have guacamole with a lot of things – its become my ‘cream’ dip of choice as it does have a creamy texture while remaining dairy free and an amazing burst of flavour. I dip veggies, gluten-free crackers, corn chips and even use it in meals, such as burritos!

Avocados are amazingly good for you too – high in the ‘good’ (monounsaturated, polyunsaturated) fats and Omega 3 fatty acids, help reduce inflammation, help to lower heart desease and aid in cancer prevention. 1 single cup of fresh avocado supplies us with 23% of folate acid required for a healthy lifestyle. Why wouldn’t you want to eat such an amazing food?


Serving for 2-3 people

2 ripe Avocados
1 ripe vine tomato
1/4 sweet or red onion
1/2 lemon (or lime)
1 clove garlic
salt and pepper to taste 

Juice the lemon (or lime). In a food processor scrap in the avocado flesh (remove the pits), add the onion, garlic and lemon juice. Process until everything is nicely combined but still a bit chunky. Cut the tomato into small peices. Place the guacamole and tomato into a serving dish and mix togther, grind some salt and pepper and serve!

So delicious and simple!
