Berry Oat Parfait

I’ve been inspired recently by various vegan and healthy bloggers posting pictures of their amazing meals – especially breakfast. Anything from pancakes to oat and chia parfaits and smoothie bowls. They always make it look so pretty too! One morning I woke up and decided ‘Today’s the day! I’m gonna make an awesome oat parfait!’. And thus began my morning journey into prettifying my food.

This oat parfait took me less than 15 minutes, which in the morning is key since I don’t give myself much time to get ready for work. As I stated in my Rawesome Vegan Pancakes post Oats are amazing little things packed with protein and vitamins!

1/2 cup oats ( I mix steel-cut and regular)
1 & 1/2 cups water (or for extra creamy oat use 1 cup almond milk, 1/2 cup water)
1 cup berries (I used strawberries and raspberries)
Handful of berries for topping  
1 tsp cinnamon
1 tsp chia seeds

Optional: 1 tsp bee pollen

Start by boiling your water (and almond milk), add the oats and allow to cook for about 5-10 minutes until most of the liquid has been absorbed and the oats are nice a fluffy. Smash up the cup of berries and add the chia seeds. Slice your handful of berries and put aside. Place half the oats in a parfait cup (or regular cup, or bowl), then add the smashed berries and chia seeds and top with remaining oats.

Then lay the sliced berries nicely on the top of the parfait and sprinkle with bee pollen.

And you’re done! It’s that simple and amazing! You could even make a few of these and keep them in the fridge for up to 5 days for a quick breakfast, lunch or even snack.
