Giddy Chocolate Cups

I’ve been working on some treat and dessert recipes lately as it’s one of those things you really have to be conscious of when eating a plant based whole foods diet. Pretty much all desserts out there are made with eggs and dairy of some kind but also refined sugars and all those weird ingredients you can hardly pronounce and kind of question. One of my favourite treats when I was young was those Reese peanut butter cups! I’d buy a pack stick them in the freezer for a few minutes and then devour them like there was no tomorrow. As a kid you don’t really worry about the foods you eat – that’s your parents job and even then it can be hard for them to convince you Brussel sprouts are better than sugar filled treats and candy.

I’ve made my own version of a chocolate cup recently and was really happy with how they turned out. Now, it’s not quite my take on a peanut butter cup but chocolate and almonds are involved!

I also mentioned in a few previous posts that I’ve teamed up with the lovely Giddy Yoyo to bring you guys some awesome recipes so I’ve incorporated a lot of their products into this one. I love Giddy Yoyo products they are all organic superfoods that really support a vegan lifestyle and provide you with the daily needed nutrients and vitamins. These chocolate cups even have some super healthy nutrients making them a way better choice than your store bought brands!

Ingredients:

For chocolate:
1 cup Giddy Yoyo Cacao Butter
2 tbsp coconut oil
2 tbsp Giddy Yoyo Cacao Powder
1 tbsp Giddy Yoyo Lucuma Powder
2 tbsp Coconut syrup (or liquid sweetener of choice)
1/3 cup Goji berries

For base:
3/4 cup almonds
8 Pitted Medjooled Dates
1 tsp cinnamon

Method:
Make base first – add all ingredients to a food processor and blend until the almonds are crushed and the dates begin to form a paste. Scoop out by spoonfuls into lined cupcake tray and press down into cups to make a level base. Once complete place cupcake tray into freezer to let base set.

Heat your cacao butter and coconut oil on low heat in a small pot. Once melted remove from heat and let stand for 5 minutes (this step in important so that the remaining ingredients can mix well together). Add coconut syrup and the cacao and lucuma powder and stir.

Remove cupcake tray from freezer and add a layer of goji berries. Pour the chocolate on top of each treat until the goji berries are almost hidden. Place back in freezer for 15-20 minutes to set everything together.

When ready to serve remove from freezer and allow to thaw for around 5 minutes, serve and enjoy!
