This has become my ultimate favourite sauce for pasta (and even rice dishes)! Its so creamy and tasty and rich. The avocado of course adds so many wonderful nutrients like proteins, amino acids and Omega oils.
It’s also really rewarding to make your own pesto – pretty much all store bought pesto out there has dairy in it so if you can’t make it on your own you pretty much have to cut it out as an ingredient in your meals. Lucky for you I’ve learned the tricks of the trade and how to make fantastic dairy free pesto and am passing it along!
1/3 Cup olive oil
1/2 Tsp minced Garlic
2 Handfuls of Basil leaves
1/4 Cup Pine nuts
Juice from 1/2 lemon
Pinch of herbs & salt
(Feel free to omit the pine nuts if you have allergies or don’t have them on hand)
Place all ingredients in a food processer and mix until a creamy texture appears. scoop into a bowl and enjoy as a dip or add to pasta and other dishes as a rich creamy sauce!
