Roasted Red Skin Potatoes

I realized I don’t have too many side dish recipes in my recipes and I made a really great side of roasted potatoes the other day so I figured I could add it! It’s a very basic and simple recipe – no fancy or extra ingredients that require you to go to your specialty supermarket, just potatoes and a really great roasted hearty flavour.

I believe rosemary really pairs well with potatoes (so do pine nuts, but for those with allergies, might be a good idea to omit), it just brings out such a rustic home-y flavour and smell – it almost feels like your standing in Grandma’s kitchen as she’s cooking her sunday dinner.

Potatoes are fantastic for you too, they offer an abundance of vitamins including Vitamin C, Folate, Iron and Potassium – Your body will thank you for including these in your diet.

Ingredients:
10 Small Potatoes
2 Tbsp high heat oil ( I use grapeseed)
1 Clove Garlic, minced
2 tbsp rosemary
Pinch of herbs ( I use herbs de Provence and extra rosemary) & salt

Optional:
Half Lemon
Handful of Pine Nuts

Method:
Heat oven to 375 degrees. Wash and cut potatoes into bite sized pieces and place in baking tray lined with parchment paper. Drizzle oil over potatoes and sprinkle on garlic, rosemary, herbs and salt (and optional lemon juice) – mix and place in oven for 30-35 minutes or until potatoes are tender and slightly golden.

Half way through the cook time, remove baking dish from oven, add pine nuts and place back in oven for remaining cook time.

When the potatoes are done, remove from oven and allow to cool for 5 minutes then serve with your meal!
