Carrot Mango Smoothie

I seriously bought so many carrots recently I was beginning to feel a bit like bugs bunny. Carrots are so fantastic too they are an excellent source of beta carotene which is really important for our eyes and vision and even helps fight arthritis. One of the most important daily juices on the Gerson Therapy is carrot juice for all the nutrients and vitamins our bodies can easily absorb.

I usually try and get a bit creative when I have an abundance of one ingredient and because I like changing up my smoothies every morning I figured I’d give it a whirl. I wanted to keep the smoothie a fantastic orange color so I added mangos which are also of an orange-yellow colour. This was a nice refreshing smoothie – not too sweet, tart or earthy tasting. It was a very soothing smoothie, especially with the addition of almond milk!

I’m also becoming very obessed with adding superfoods to my smoothie – its a great way to get more nutrients and vitamins without changing the colour, taste or texture too much. I added Lucuma to this smoothie as its got a bit of a sweet smell and taste. Lucuma is really cool – the trees grow mostly in Peru and can live up to 500 years or longer and continue to produce fruits that entire time! Lucuma itself is a great source of antioxidants, Vitamins A, B3 and C and is low glycemic so it’s great for diabetics. It also provides an excellent source of fibre and beta carotene, and so it helps boost the eye and vision support your already getting with the carrots.

Ingredients:
1 Cup Chopped Carrots
1 Cup Mango
1 Cup Almond Milk
2 Tbsp Chia Seeds
1 Tbsp Lucuma Powder

Optional:
Sprinkle of bee pollen

Method:
Add all ingredients to a blender and mix until smooth. Pour into your favourite cup and enjoy!
