If you follow my Instagram account you’ll know I just purchased 3 awesome Canadian vegan cookbooks! after flipping through them I got some inspiration for new recipes, including this insanely delicious apple pie pancake creation!
I woke up to snow on the ground this morning so I starting thinking of warming foods and ingredients that would suit the weather. I can remember as a child going tobogganing all day down the snowy hills and then warming up with a hot cup of apple cider – so I began thinking of ways to use apple in my pancake recipe. Apple pie is usually the dessert of choice after a hearty wholesome meal for many in North America and since we all know I have a crazy sweet tooth I figured why not make it into a breakfast!
I promise you’re going to love this one – they’re the fluffiest pancakes I’ve made yet and just so moist and delicious. You’ll never believe your not eating an apple pie!
1/2 Cup All Purpose GF Flour
1/4 Tsp xanthan Gum
1 Tsp Flax Egg (1 tsp ground flax, 3 tsp water)
3/4 Cup Dairy-Free Milk (I used coconut milk)
1 Tbsp Cinnamon
1/2 Cup Finely Chopped Apples Pieces
1 Tsp Vanilla
1 Ripe Banana
1 Tbsp Aluminum Free Baking Powder
1/4 Cup Water
Maple Apple Sauce Ingredients:1/2 cup unsweetened organic apple sauce
1/3 cup maple syrup
1/2 cup finely chopped apple pieces
Sift your flour into a large mixing bowl, add your cinnamon, baking powder and xanthan gum and set aside. In another bowl smash your banana, add your milk and vanilla and mix together. Stir the wet mixture into your dry mix and being to whisk everything together. Add your flax egg, water and finely chopped apples and whisk once more.
Heat a skillet on medium-low and coat with coconut oil. Pour your mixture into the pan to form a circular shape. Allow the pancakes to cook and slightly brown on one side before flipping. Continue this process until you’ve used all your mixture.
