I love making healthy versions of junk food! These chocolate AB cups are so amazing. There are some days where I honestly miss eating the junk food I used to as a kid. I don’t miss the ‘junk’ part but just the novelty of those treats! That’s why making healthy versions are so fun! These are a great alternative to Reese peanut butter cups but far less fat, sugar and absolutely no refined, processed or weird ingredients. I promise you’ll love these as much as I do!
Makes 6-8 Cups
For the chocolate-
1/2 Cup Cacao Butter
2 Tbsp coconut oil
2 Tbsp Cacao Powder
2 Tbsp Coconut syrup (or liquid sweetener of choice)
For the almond butter filling-
2 Tbsp Almond Butter
1 Tbsp Maple Syrup
1 Tsp Coconut Sugar
Melt the coconut oil and cacao butter on low heat in a small pot. Add cacao powder and coconut syrup and stir until smooth. Remove from heat and let sit for about 5 minutes.
Put 6-8 liners in a cupcake tray and pour a tablespoon of the chocolate mix into each cup. Place the tray in the freezer for 15 minutes.
Mix the almond butter ingredient together in a small bowl. Pull the chocolate cup tray out of the freezer and add a small scoop of almond butter mix into each cup, squish down as flat as you can and then add another tablespoon and a bit to cover the almond butter.
Place the tray back in the freezer for at least 30 minutes. When the cups have set remove from tray and liners and keep refrigerated for up to 2 weeks in a sealed container. Or enjoy right away! 😉
