I am so in love with this hummus, not only does it taste great it totally stands out from the traditional boring yellowish and dull looking hummus and it gets it’s colour from a natural ingredient – beets!
Before you click back or go looking for another recipe, I can promise you there’s not a hint of beet taste to this hummus. It tastes like good old hummus, that’s it. By adding a bit of beets simply for colour though, you still get all of the great benefits beets have to offer like antioxidants, anti-inflammatory and detoxifying support, not to mention a high dose of iron, folate, manganese and fibre! Get ready to love pink!
1 Cup Chickpeas
1-2 Cloves Garlic
1/4 Cup Tahini
1/2 Cooked Beet (boiled or baked)
Pinch of Salt
Juice your lemon, add everything to a food processor and mix until you get a nice pink creamy texture. Scoop out and serve in your fave dish with some veggies, flat bread or whatever you like 😉
