Creamy Avocado Pesto Zoodles

So I realized the other day I have a few recipes I’ve made, tested and tried and are so yummy and delicious now, but I forgot to post them! So be prepared for a many a recipe posts coming your way.

Today I wanted to share my zoodle recipe as it’s become a delicious fave for me! I never ever thought I’d eat raw veggies in replacement of noodles. The thought of having something cold when it could be warm and comforting just did not interest me. But of course, being on this healing journey I’ve discovered so many new things I thought I’d never explore or try or enjoy and now I do.

So, let me start by saying this is not a replacement to warm cooked pasta. I believe that is a dish all on its own. Zoodles are a great refreshing way to enjoy more veggies. So what exactly are zoodles? They are zucchini noodles. You make them by running the zucchinis through a spirulizer. There are a variety of spirulizer’s on the market and I believe they all do a relatively good job. I use a compact one that’s hand-held but of course you can get the more industrial ones as seen on Hemsley & Hemsley and Deliciously Ella. Once the zoodles are made its as easy as pouring in the sauce, mixing and enjoying! These are super delicious and very nourishing as you’re getting all the important vitamins and minerals from the raw zucchini.

Ingredients:
1-2 Large Zucchini*
1 Large Avocado
1/4 Cup Olive Oil
1/2 Lemon
Handful of Fresh Basil
(Or 1-2 Tbsp dried)
Pinch of Himalayan Salt

Optional:
1 Small Clove Garlic
Handful of Pine Nuts

*It is important to either buy organic or wash thoroughly as you will be consuming the entire zucchini, including the skin

Method:
Get your spirulizer and food processor out. Juice your lemon and add to food processor. Scoop out avocado meat (leave out the pit/stone) and add to food processor along with your basil, salt, olive oil and optional ingredients. Process everything until it forms a nice creamy sauce.

Grab your zucchini and spirulize into long noodle like strips into a large bowl. Once all the zucchini has been spirulized pour the avocado cream sauce on top and mix together. Portion onto 1 large plate or 2 small plates for sharing and enjoy!
(Optional: garnish with pumpkin seeds for extra nutrients and crunch)

Notes
  1. Make sure you use organic zucchini's or wash them thoroughly before use!
