I love making easy and quick pasta dishes. It’s crazy to think before venturing onto this healthy and wellness and healing lifestyle I was afraid of pasta. Everyone seems to think of pasta as carbs – carbs = fat, fat = weight and the vicious cycle continues. This may infact be the case for refined white pasta, but when you’re eating a healthy well balanced diet full of whole foods and plant based ingredients you worry less about these kinds of things. You just consider the nutrition content and not the specifics like fat or carbs or calories. Although I do post specifics on some of my recipe titles, I find it helps others searching for more specific recipes, but I do still enjoy recipes and goodies filled with unrefined sugars and I still use oils on occasion, again, everything is balanced.
So onto the reicipe for this delicious pasta! It’s really really tasty and comforting I’m sure I’ll be making it a tonne more in this cold weather!
1/2 Cup Pasta Sauce
Pinch of Sea Salt
Handful of Your Fave Herb (I use cilantro)
1 Lemon Wedge
1 Cup Brown Rice Pasta
Bring a pot of water to a boil and add your pasta, stirring occasionally. In a food processor add your pasta sauce, avocado, salt, herbs and the juice from your lemon. Blend until nice and creamy. Drain your pasta and place back into pot or large bowl and add your sauce, mix and then serve and enjoy!
