This parfait made me so happy! It was bursting with all kinds of flavors and everything paired so well together. The best part is it was so easy and quick to make! Under 15 minutes so you can make and enjoy this baby during the week if you need something quick in the mornings!
Parfaits are always a fun way to make your meals look super fancy. All the colourful layers and yummy ingredients. I can promise you this one is bursting with goodness. Oats are always a great breakfast choice as their loaded with complex carbs and protein so you’ll be fuller longer. Your also getting a great supply of Vitamin C and antioxidants with the berries so this makes for a real power meal!
1 Cup Oats
1/2 Cup Raspberries
1/3 Cup Blueberries
2 Tbsp Almond Butter
1 Tbsp Cacao Powder
1 Tsp Cinnamon
1/2 Cup non-dairy Yoghurt
2 Tbsp Liquid Sweetener (honey, maple syrup, date syrup)
Pinch of Sea Salt
Bring 2 cups of water (or non-dairy milk) to a boil in a pot, add your oats and cook for 10-20 minutes. Once the water has been absorbed, add your almond butter, cinnamon, cacao powder and liquid sweetener to your oats, mix and cover pot to let set for 5 minutes. In a small pot add your berries and a bit of water and heat on medium-high until berries are bursting with natural juices. Grab a parfait glass (or bowl) and lay down your first layer of oats (about half your cooked oats) layer on half your yoghurt and then add half your Berry mixture. Repeat the same steps to complete a double layered parfait. Grab a big spoon and enjoy!
