Vanilla Nice Cream Cake with a Chocolate Fudge Center

Can we just leave it at that? Ok ok.. I’ll share the details first.. But honestly.. You might just want to skip right over it and start at the ingredients because your. Gonna. Want. To. Make. This.

I don’t even know why I had the idea.. I guess I’ve been seeing a lot of delicious cakes on IG lately. They were all vegan cheesecakes mind you and while they’re too delicious for me ice cream cakes are the winners. Especially since I discovered how easy it is to make ‘ice cream’! It’s so easy! Freeze a bunch of peeled bananas, chop them into small pieces and add to a food processor or high speed blender. Mix. Done. Of course you can get creative and make your own flavours and such.. So I added some vanilla to this one. But real vanilla bean powder, I’m not too sure how imitation vanilla would work but if that’s all you’ve got.. Add it. (But then go out and buy vanilla bean powder for next time!).

I made the crust as I normally do with a few dates and almonds but I also added some oats.. Not sure why, I’ve been adding oats to a lot of recipes recently. Sometimes I go through phases I guess. Thennn I added the fudge-y layer. Yummmmmm. And of course a thick layer of nice cream to top it off. I’m obsessed. Now.. Get your ingredients together! We’re gonna make this delicious dream cake now.

For the crust
1/2 Cup of Almonds
1/3 Cup of Oats
6 Pitted Medjooled Dates

For the chocolate fudge
11 Pitted Medjooled Dates
1 Cup Shredded Coconut
1 Tbsp Cacao Powder
1/2 Tsp Vanilla Bean Powder

For the nice cream
5-6 Frozen Bananas
1/2 Tsp Vanilla Bean Powder
1 Tbsp Maple Syrup
1-2 Tbsp Almond Milk

For the crust
Add all ingredients to a food processor and mix until you get a slightly sticky flour like texture. Grease a springform pan with coconut oil and spread the crust along the bottom of the pan. Place in the freezer to set.

For the chocolate fudge
Add all ingredients to a food processor or high speed blender and mix until a nice gooey sticky texture appears. Remove your pan from the freeze and spread on your fudge layer. Place back in the freezer to set.

For the Nice Cream
Add all ingredients to a food processor or high speed blender and mix until you get a texture much like soft serve ice cream. Grab your pan from the freezer and spread this layer on the top. Cover the pan (plastic wrap, tin foil) and place back in freezer to set everything together.

When you are ready to enjoy, remove from freezer, slice and serve!
