Vanilla Dream Donuts | Vegan (Dairy Free, Egg Free), Gluten Free, Oil Free, Refined Sugar Free

OMG. Donuts! I absolutely love that I’m getting more into baking and creating delicious sweet baked goods along with savoury dishes. It’s great to have a variety, that way you never get bored of what your making or eating!

These donuts are awesome! I think I’m so excited because they are like this novelty item for me, something I thought I’d never be able to make at home. and now, look at me! I’m making them every chance I get because they’re just so fun. The garbanzo flour really adds a nice dense texture to the donut which makes it taste nice and cake-y but the extra 1/2 teaspoon of baking powder allows the donuts to rise making them nice a soft. I’m so happy with these, I’ve tested the recipe all week (I’ve made more than a tonne of donuts) and I’m really excited to share it with you now.

1/3 Cup Bobs Red Mill All Purpose Gluten Free Flour
2/3 Cup Bobs Red Mill Garbanzo & Fava Flour
1/2 Cup Almond Milk
1/3 Cup Maple Syrup
1 & 1/2 Tsp Baking Powder
1 Tsp Cinnamon
1 Tsp Vanilla
1 Tsp Coconut Sugar

1 Cup Icing Sugar
1/4 Cup Maple Syrup
1 Tsp Vanilla

Pre-heat your oven to 350 degrees. Grease a donut pan with coconut oil. Add all the dry ingredients to a bowl and mix together, pour the maple syrup and almond milk into the mixing bowl and stir everything until they’ve mixed nicely together. Scoop out the mixture and pour into the donut tray (make sure you don’t fill the tray, about 1/2 to 2/3 full is good). Place the donut tray into the oven and allow to bake for 10-12 minutes or until you can stick a toothpick in and it comes out clean. Remove from oven and allow to cool for 2-3 minutes then transfer the donuts (upside down) from the donut tray to a cooling rack.

Add all ingredient to a bowl and mix together until you get a nice consistency. You don’t want the icing to be too runny or too thick. If you need to add more of one ingredient, do so. Dip the ‘bottom’ of the donuts in the icing and add your sprinkles or toppings and place back on cooling rack. The icing may continue to drip so ensure you have either a pan or some paper under the cooling rack to catch the extras.

Once the icing has dried you can enjoy the donuts right away! Beware, when you make these, they won’t last long! Anyone and Everyone will want to try them!
