Fresh Garden Greens Salad

I absolutely love this time of year. Farmers markets are open, your backyard garden is growing lusciously and you just can’t get enough of the fresh, local ingredients that are bursting with flavor. I can’t begin to say how much more beneficial greens are for us this time of year. Actually, anytime a food is in season and you can get it locally, you will gain the most amount of nutrients and vitamins from it. The freshness is preserved because the greens only have to travel from that farm down the road to your plate. Yum!

This salad was inspired by items I received from my CSA delivery plus the goodies that are growing in my backyard, its a really simple salad that packs a lot of nutrients and flavor!

Ingredients:
1 Head of Butter Lettuce (or Romaine, Red Leaf)
3-4 Stalks of Kale (I used Dinosaur)
1 Small Cucumber
1/2 Head of Radicchio
Handful of Fresh Dill
Handful of Fresh Cilantro

Method:
Wash and cut all of your greens, add to a bowl and mix together. Pour on your favourite dressing, I love using Raw Foodz dressings (sea-zar or Italian) serve and enjoy!
