Baked Blueberry Banana Oatmeal | Vegan, Gluten-Free, Dairy-Free, Low-Fat

There are mornings where I so just crave warmth over a lovely smoothie – this is when I go to baked oatmeals as they’re not only warming but comforting and hearty and can be just so delicious! As a kid I always enjoy the packaged instant oatmeal with all kinds of sugars and pretend flavors, now that I know what’s in those packages I really enjoy making my own oatmeal knowing exactly what’s in it and that it will all be good for my body.

Baking bananas in this oatmeal is fantastic as the bananas almost become caramelized and gooey and add just the perfect sweetness and the blueberries just become so much more juicy and almost burst with flavor in this recipe. Of course adding the almond milk makes it all nice and creamy and ensure the oats cook to become nice and fluffy.

Ingredients:
1 Banana
1/2 cup blueberries
1/2 cup oats
1/2 cup almond milk
2 tsp cinnamon
handful pecans

Optional:
1 tsp lucuma powder
2 tbsp maple syrup

Method:
Preheat your oven to 350 degrees and place the oats in a bowl and soak in hot water for about 5 minutes. Drain excess water and transfer oats to a small baking dish. Slice the banana and crush the pecans into bite sized pieces. Add almond milk, cinnamon, blueberries, half the sliced banana and pecans (also optional lucuma powder and maple syrup) – mix everything together, pat down and top with more slices of banana. Place baking dish in oven for about 15-20 minutes and remove when bananas have nice baked look on top. Allow to cool for about 5 minutes and then enjoy!
