Crunchy Cinnamon Granola


I was actually thrilled when this first batch of granola turned out! I’d never made it before and kind of went out on a whim and started throwing things in a bowl together. Some nuts, some seeds, some cinnamon.. and here we are. A note-worthy recipe!

This is an awesome granola to keep on hand as a cereal replacement, a great addition to coconut yogurt and berries or simply eaten by the handful! I know I’m just posting this recipe, but I made this granola about a week ago and it’s already gone! It was a hit so I’m excited to share it with you.

Ingredients:
1 Cup Oats
1/2 Cup Almond
1/2 Cup Pecans
1/4 Cup Pumpkin Seeds
1/4 Cup Sunflower Seeds
1/4 Cup Cacao Nibs
1/4 Cup Coconut Flakes (Shaved or Shredded)
3 Tbsp Cinnamon
1 Tbsp Vanilla Bean Powder (or Vanilla Extract)
1/3 Cup Maple Syrup
Pinch of Sea Salt
Optional: 1-2 Tbsp coconut sugar for topping


Method:
Pre-heat oven to 375 degrees. Add everything to a mixing bowl and mix together with a spatchula/wooden spoon or clean hands. Line a baking dish with parchment paper and pour bowl contents into dish. Top with coconut sugar and place in oven for 15-20 minutes or until everything looks golden brown and starts smelling delicious! Allow to cool for at least 5 minutes and enjoy right away! Store in air-tight container for up to 2 weeks.
