5 Comforting Vegan Breakfast Recipes

I’ll admit, I still really do love eating as vegan as possible. Or, plant-based. Whatever word is popular these days. But I love it. I feel the best when I cook and bake without any animal products and since I’ve been craving comforting, warming breakfasts recently, I thought I’d share 5 of my very own favourite recipes that I’ve created over the past 2 years and have been recreating quite a bit recently. I’ll admit a few of them seem to be your favourites too so, no surprises. Hopefully it gets you inspired to change up your morning eats or try something new!

  1. Baked Blueberry Banana Oatmeal
    I love this recipe, it’s so insanely easy I can bake it in the oven while I finish getting ready and eat it before I go or bring it on the go to eat later!

  2. Superfood Cookies
    These are super-easy to make! And you can make a batch of them on the weekend to eat up over the weekdays if your mornings tend to be as rushed as mine. They’re light too, so if your not a breakfast person, grab one and you’re brain and bod’ will be so glad you did!

  3. Chewy Cranberry Coconut Granola Bars
    Again, these are a great idea for weekend baking and a really easy food to grab in the mornings when your rushed out the door!

  4. Apple Pie Pancakes
    When I’ve got a bit more time in the mornings and on weekends I love making pancakes and delicious breakfasts. These Apple Pie pancakes are rich and delicious but filled with goodness!

  5. Oatmeal Chocolate Chip Pancakes
    You can actually batch make these, enjoy that morning and save a few for the week to pop in the toaster when you’re on the go!
